- Machaca
- A dried, spiced meat (most commonly beef or pork), that is then rehydrated and pounded to make it tender. Example dishes included flautas, tacos, burritos, or on a plate with eggs, onions and with peppers (chiles verdes or chiles poblanos).
- A spicy Mexican soup made with tripe. Other ingredients may include onions, tomatoes, chilies, and hominy.
- Mezcal (me-skal)
- (Occasionally spelled mescal) A colorless alcoholic spirit distilled from the fermented juice of certain agave plants. See also tequila
