• Huevos a la Mexicana: Scrambled and fried eggs with chopped tomatoes, onions and green chili pepper, usually served with a side of beans.
• Huevos rancheros: (Rancher's eggs) Fried eggs served on a fried corn tortilla and topped with a tomato-chili sauce or salsa.
• Huevos motuleños: Fried eggs (sunny side up) over black beans, served on a tortilla and topped with salsa and cheese. May also include ham, peas, plantains, or chorizo.
