Barbacoa (barba'koa)
Slow-cooked meat over an open fire, or more traditionally, in a hole dug in the ground covered with maguey leaves. May also refer to meat steamed until tender. Often served on warm corn tortillas with guacamole and salsa. Tacos are often served in the banana leaves on which they were cooked, and eaten with diced onions, chopped cilantro and a squeeze of lime juice.

Bistek
(Spanish: bistec) Meaning steak. Usually a salted and peppered sirloin, flattened and tenderized, covered in bread crumbs and fried. Usually served in tacos.
Bionicos
A fruit salad consisting of a variety of fruits chopped up into small cubes, drenched with crema (condensed milk and sour cream) and topped off with granola, shredded coconut, raisins and sometimes honey. Often made with papaya, cantaloupe, honeydew, strawberries, apples and banana.
Birria
A spicy stew, traditionally made from goat meat or mutton, but occasionally from beef or chicken.

Burrito
A soft, flour (wheat) tortilla wrapped or folded around the filling. Some common ingredients include meat, rice, beans, lettuce, salsa, guacamole, cheese, and sour cream.
  • Bean and cheese burrito: rice, refried beans, cheese, salsa, sour cream in a flour tortilla.
  • Carne asada burrito: sliced and grilled beef steak, guacamole, salsa (or pico de gallo). Optional ingredients may include cheese or french fries (thanks San Diego).
  • Chile Colorado burrito: (typically served in the style of wet burrito). Chunks of beef (or pork), red chile sauce, beans and cheese.
  • Chile verde burrito: (typically served in the style of wet burrito). Seasoned, spicy chunks of pork, chile verde sauce, beans and cheese.
  • Wet burrito: (sometimes called "smothered," "enchilada style," or "mojado") A burrito that is covered with a red chili sauce (similar to enchilada sauce) or chili verde sauce, with melted shredded cheese on top.
