Strips or chunks of meat (typically skirt steak, chicken, prawns, pork or lamb) grilled or sautéed with onions, mushrooms and bell peppers and served on a hot, iron skillet. Usually comes with corn or flour tortillas and other condiments such as lettuce, tomato, cheese, sour cream, guacamole, salsa or pico de gallo.

- (Spanish for "flute") A rolled-up tortilla with some type of filling, including beef, cheese or chicken, then crisp-fried. Often topped or served with with sour cream and guacamole. Corn or flour tortillas are generally used. (See also taquito, tacos dorados)

(Or frijoles) is a bean, usually pinto, black or red (kidney) bean.
- Frijoles charros: (cowboy beans) Stewed pinto beans with onion, garlic, and bacon. Other common ingredients include chile peppers, tomatoes, cilantro, ham, sausage, pork and chorizo.
- Frijoles refritos: Well cooked or fried and mashed pinto beans; baked or fried, often with onion and garlic in a small amount of lard, vegetable oil, bacon drippings or butter and seasoned to taste with salt and spices. Black or red (kidney) beans may also be used.
